At Alpe Pragas, flavours with character are created. Behind every new variety lies a creative process that begins long before production – with a thought, a moment, an idea. Achim and Hansjörg work in the production team. Together, they share how new blends at Alpe Pragas are developed – inspired by unique ingredients, travels, conversations, and a passion for experimentation.

How does a new recipe actually come about? “Usually it starts with a conversation, a flavour that sticks, or simply a sudden spark of inspiration,” they explain. Then it gets practical: which ingredients work well together? Is it feasible to make? The best fruits are selected, and the first trial batch begins. Using a Thermomix, fruit, sugar or agave syrup (for the organic line), lemon juice, and apple pectin are blended. Step by step, the recipe is refined until everything fits perfectly.

What makes the Limited Editions so special? These special editions allow even more room for creativity. They can be more adventurous – featuring unusual combinations and rare, exclusive fruit varieties sourced directly from the fields of South Tyrol and around the world. Small batches, big ideas. Each recipe tells a story – not just about flavour, but also about origin and emotion.

And how long does this process take? Sometimes a few weeks, sometimes several months. The person who had the idea tests it first, then it’s discussed within the team. What matters most is the overall result: taste, texture, balance. The question always asked is: does it evoke something? Does it leave a lasting impression?

Is there a moment when you know: It’s ready? “When no one wants to change anything anymore,” they say. “There’s a silent agreement – a glance, a nod – and we know: it’s just right.”

What ends up in the jar is the result of knowledge, creativity, and many small decisions. And perhaps that’s exactly why it’s so special.
