Alpe Pragas Cheesecake

INGREDIENTS

  • 550 g cream cheese
  • 200 g digestive biscuits
  • 180 g sugar
  • 90 g butter
  • 50 ml double cream
  • 3 eggs
  • 1 vanilla pod
  • 3 tbsp plain flour
  • Organic fruit preserve of your choice

METHOD

  1. Preheat the oven to 180°C.
  2. Crush the digestive biscuits finely, add the melted butter, and press the mixture into a greased springform tin.
  3. Place the cream cheese, eggs, sugar, flour, double cream, and vanilla pod in a bowl and whisk everything together.
  4. Pour the mixture over the biscuit base and bake for 45 minutes.
  5. Allow the cheesecake to cool in the fridge for at least 6 hours after baking.
  6. Add the organic fruit preserve and enjoy the cheesecake.
