Cheesecake from Alpe Pragas

La Cheesecake di Alpe Pragas


  • 550g fresh cheese 
  • 200g dry biscuits 
  • 180g sugar 
  • 90g butter 
  • 50ml cream 
  • 3 eggs
  • 1 vanilla bean 


Preheat the oven to 180°C and finely blend the biscuits. Add the melted butter and spread the mixture into a buttered pan. Pour the fresh cheese, eggs, sugar, flour, cream and vanilla beans into a bowl, whisking everything together. Pour the mixture on the biscuit base and bake for 45min in the oven. At the end of cooking, let the cake cool in the fridge for at least 6 hours. At the end add our organic fruit preserve and taste it with great pleasure.
