Fluffy Pancakes with Blueberry Fruit Preserve

I Pancake di Alpe Pragas

INGREDIENTS

  • 200 ml milk
  • 1 egg
  • 25 g sugar
  • 120 g flour
  • 30 g melted butter
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1 pinch of salt
  • 335 g blueberry fruit preserve

METHOD

  1. Place all ingredients – except for the fruit preserve – into a tall mixing jug and blend briefly with a hand blender until smooth.
  2. Leave the batter to rest in the fridge for about 30 minutes.
  3. Lightly grease a small non-stick frying pan with a bit of butter, add a small ladleful of batter and cook until bubbles form on the surface. Flip the pancake and cook for another 1–2 minutes until golden on the other side.
  4. Serve the pancakes warm with a generous spoonful of blueberry fruit preserve.
