Fluffy Pancakes with Blueberry Fruit Preserve

INGREDIENTS
- 200 ml milk
- 1 egg
- 25 g sugar
- 120 g flour
- 30 g melted butter
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 1 pinch of salt
- 335 g blueberry fruit preserve
METHOD
- Place all ingredients – except for the fruit preserve – into a tall mixing jug and blend briefly with a hand blender until smooth.
- Leave the batter to rest in the fridge for about 30 minutes.
- Lightly grease a small non-stick frying pan with a bit of butter, add a small ladleful of batter and cook until bubbles form on the surface. Flip the pancake and cook for another 1–2 minutes until golden on the other side.
- Serve the pancakes warm with a generous spoonful of blueberry fruit preserve.
