Waffles with Gooseberry Fruit Preserve

INGREDIENTS

  • 180 g flour
  • 190 ml milk
  • 75 g melted butter
  • 50 g sugar
  • 2 eggs
  • 1/2 tsp baking powder
  • 1 pinch of salt
  • 2 tbsp neutral vegetable oil
  • 1/2 tsp vanilla paste
  • 200 g “Stacchus” fruit preserve – green gooseberry

METHOD

  1. Separate the egg yolks from the whites. Whisk the egg whites with half of the sugar until stiff. Beat the yolks with the remaining sugar, then add salt, vanilla paste, milk and melted butter. Sift in the flour with the baking powder and mix. Gently fold in the egg whites using a spatula.
  2. Heat the waffle iron and lightly grease it using a paper towel dipped in oil. Pour a small ladleful of batter onto the plate, close and cook for about 2 minutes until golden brown.
  3. Serve the waffles warm with fruit preserve, garnished with fresh berries.
