Waffle with stacchus fruit preserve - green gooseberry

Waffle con composta stacchus - uva spina verde


180 g of flour

190 ml of milk

75 g of melted butter

50 g of sugar

2 eggs

1/2 teaspoon baking powder

1 pinch of salt

2 tablespoons of seed oil

1/2 teaspoon vanilla paste

200 g Stacchus fruit preserve - Green gooseberries

Separate the egg yolks from the whites and whip the latter until stiff with half the sugar. Beat the egg yolks with the rest of the sugar, then add the salt, vanilla paste, milk and melted butter, then the flour sifted with the yeast. Incorporate the egg whites into the mixture, mixing gently with a spatula. Heat the waffle iron and grease it by dabbing it with a sheet of kitchen paper soaked in oil. Pour a ladle of batter onto the plate, close it and wait a couple of minutes before reopening it and checking the cooking. Serve the waffles hot with the fruit preserve and garnished with fresh fruit and flowers.
