Among the typical fruits of our area, the gooseberry stands out. The plant, a bush with branches covered in thorns, belongs to the Ribes genus, produces small fruits in the shape of a translucent berry, collected in bunches similar to common grapes, hence the name Uva Spina or Ribes Uva Crispa. The white, green and red varieties are available, with a characteristic bright and inviting tone. In Alpe Pragas we select the green gooseberry.
The fruit is nutritious and refreshing, rich in vitamins, fiber and antioxidants. The flavor is fresh, aromatic and sweetish with a pleasantly acidic note. The aroma is intense and reminiscent of a combination of grapes and kiwi.
Its acidity makes it perfect for balancing sweeter or fattier flavors. Green gooseberry compote is ideal paired with toasted bread with a touch of butter or yogurt; delicious for stuffing Waffles; surprising when paired with fresh cheeses.
