Apple pectin: the jellying agent
Pectins are used in the food industry for the preparation of stewed fruit,
pastry, and baked products as an indispensable ingredient in many products
in which jellying agents, thickeners and/or stabilizers are used for various
reasons. In nutritional terms, pectins are considered fibres, and are contained
in all relatively tall crops. Pectins are extracted from plants with high pectin
content, such as apple skins or lemon rinds. The pectin is dissolved from
the skins or rinds using boiling water or steam and is then extracted from
the solution by means of alcohol. Pectin in flake form is washed with water,
delicately dried and then jellied using sugar until the desired density is
reached.
