The lemon juice effect
Lemon juice is added to stewed fruit due to its anti-oxidant effect and because
it helps maintain the fruit’s natural colour. Anti-oxidants are used in the food
processing sector to prevent the oxidation of sensitive molecules. The citric
acid and Vitamin C (ascorbic acid L) contained in lemon juice prevent the
oxidation of the fruit responsible for the typical brown colour. This is why
lemon juice is so important: it preserves the natural colour of the fruit used in
the compote while adding fresh taste. We obviously use natural lemon juice
and not artificial citric acid and ascorbic acid in our high-quality products.
