Fructose instead of sugar
Fructose, the sugary substance in fruit, is a monosaccharide (simple sugar)
and as such is classed as a carbohydrate. Fructose is found in natural form
particularly in fruit and honey. Fructose is used primarily to sweeten foods
formulated for people afflicted with diabetes because it is absorbed by the
body with no release of insulin. The level of sugar in the blood rises much
slower with fructose than with the cane or beet sugar normally used in foods.
When blood sugar levels rise, the pancreas reacts by releasing a hormone
known as insulin into the bloodstream that regulates the glycemic rate.
Although humans cannot live without insulin, when the insulin production
malfunctions, diabetes arises. Even healthy people would be wise to avoid
excessive peaks, drops, or oscillation of either kind in their blood sugar levels.
