Spicy garnishing from the world of exotic flavours.

Here’s an extraordinary creation from the ALPE PRAGAS kitchens: chutneys are exclusive and delicate combinations made with various types of fruit and/or vegetables to a balanced flavour enhanced by precious spices. The English were the first to discover this aromatic garnishing and bring it to Europe from India. Our chutneys do not distinguish themselves by extreme spiciness but rather by the balance of their recipe. Alpe Pragas has developed a series of particularly refined recipes that will undoubtedly titillate your taste buds. Chutneys go extremely well with certain cheeses, cold meats and game.


  Chutney

The Indian word “Chutney” is used for spicy, sweet and sour sauces served to complement other foods. Although there are many different types of chutney, they are all made with fresh fruit and/or vegetable, which are sometimes used in whole pieces. The consistency is not liquid, and more closely resembles that of stewed fruit. The final taste comes with the addition of spices, vinegar, lemon juice, and sugar, and the cooking is more intense and longer than the process used for normal stewed fruit. The fruit is also usually stewed at a higher temperature in order to give the final product a slightly caramel taste

Excellent with fresh goat’s and cow’s milk cheese, brie and fresh pecorino.

Apple and onion
Tasty apple and onion creation, enriched with spices. Particularly tasty if served with mountain cheeses or mature pecorino and boiled meats.

Apricot and pumpkin
Fruity apricot and pumpkin creation, flavoured with star anise. Excellent accompaniment for whole cow’s milk cheeses and
medium mountain cheeses.

Figs and green tomatoes
Delicate fig accompaniment for cheese.
Ideal for very mature cow and sheep’s milk cheeses and full-bodied mountain cheeses.

Pepper and chilli
A creation for red pepper lovers.
Excellent with tasty, hard cheeses, parmesan and grilled meat.

Pear and saffron
Based on fresh pears, aromatised with saffron.
To be served with fresh cheese, particularly pecorino type.
Excellent as a sauce for cheese fondues.

Blueberry and horseradish
Tasty forest blueberries with horseradish.
Ideal for accompanying smoked and boiled meats, speck, cold dishes and smoked fish.

Raspberry and balsamic vinegar
Fruit speciality, aromatised with balsamic vinegar matured in barrels.
Ideal accompaniment for medium cheeses, hard cheeses and parmesan.

Spicy chutney for barbeques
Spicy combination of different kinds of peppers and exotic saffron.
Tasty accompaniment for barbequed food and full-flavoured cheeses,
like mature pecorino and parmesan.

Figs and spicy mustard
Sweet and delicate figs combined with very spicy mustard.
Ideal accompaniment for medium and mature whole milk cheeses.
