“Respectful” processing

For us it is of prime importance to maintain the fruit’s precious ingredients, such as vitamins and aromas. That is why we never bring our fruit to boiling point (100°C) when making our preserves. How do we manage? The process goes by the name “vacuum cooking”. Imagine you are on a mountain peak at eight thousand metres. At these altitudes the atmospheric pressure is so low that water boils already at around 85°C. In our boilers the fruit cooks at 65°C. Then we put the preserve into glass jars, pasteurise it briefly in the jars to ensure that the product will keep, and then cool it immediately to keep the precious ingredients at their best: we are convinced that you can tell!
Just one word of advice: due to the high fruit content, the product is easily perishable after opening. So the opened jar should always be kept in refrigerator, where the product will stay good for about two weeks. To avoid external contamination, for all fruit preserves it is recommended to use a special spoon intended only for that purpose.
